2 tbsp olive or coconut oil
2 sweet potatoes, diced, par-boiled for about 5 minutes, then drained
1 lb ground bison or beef
2 leek, sliced
8 cups arugula
1/2 cup pepitas
Heat a cast iron skillet over medium high heat and add olive oil. Add sweet potato and leek and saute for about 5-7 minutes until the potatoes start to brown
Add ground bison and cook for an additional 4-5 minutes or until meat is cook through. Add in arugula and stir until wilted.
Fry eggs to your liking in a seperate skillet and add on top of hash along with pepitas.
