Peanut Butter Cookie Ice Cream Sandwiches
I was about to freeze what was left of a batch of peanut butter cookies when I found the perfect match deep in my freezer: fudge-swirled vanilla ice cream with chocolate-covered peanuts (a.k.a. tin roof ice cream) that I made last month. The sandwiches turned out delightfully drippy & a bit messy, but so tasty. I ended up cutting them into quarters to make them last longer.
Pesto & Hard-boiled Egg Toast
Why do I always pick the wonkiest looking loaf at the grocery? Whole-wheat toast with pesto, hard-boiled eggs, chives, salt & pepper.
Green Pea Minestrone
Because there’s a still a lingering chill outside, I made a spring version of classic minestrone soup with plenty of peas, carrots and leeks.
Cookies & Cream Cake
