Slow Cooker Red Lentil And Chickpea Soup
It had been a long time since I'd made red lentil & chickpea soup with butternut squash. It took me less than 10 minutes to get everything into the slow cooker, and in 6 hours I had a week's worth of soup.
Peanut Butter Cookie Ice Cream Sandwiches
I was about to freeze what was left of a batch of peanut butter cookies when I found the perfect match deep in my freezer: fudge-swirled vanilla ice cream with chocolate-covered peanuts (a.k.a. tin roof ice cream) that I made last month. The sandwiches turned out delightfully drippy & a bit messy, but so tasty. I ended up cutting them into quarters to make them last longer.
