Easter for Two

Everything you need for a small-scale feast!

Easter at Home

Usually the Dolfi family gathers around after Easter Mass for a brunch spectacular. A table filled with quiches, bright, beautiful salads, roast fish, spring veggies, baked goods galore and an Easter egg hunt to cap it off. Although most of us are foregoing our usual plans for Easter this year, it can still be a special holiday spent at home with your loved one (or just yourself!). All of these recipes have ingredient lists you can customize or substitute, just depending on what you have in your fridge and pantry. We hope you celebrate this holiday in whatever way you can.

Spring Quiche with Asparagus and Ramps
By @mollyjean4
Putting together a little Easter brunch? This quiche is the answer! It combines all of my favorite spring veggies into one creamy, eggy heaven. And the ramps can be easily replaced with chives, scallion or even red onion! And the best part is, you’ve got breakfast for the rest of the week.

Asian Pear, Fennel, Radicchio Salad with Spicy Citrus Dressing
By @saharabohoskey

This gorgeous salad is a recipe I’ve made for Christmas and now I intend on adapting it for Easter. Don’t have pears? Substitute apples, orange segments, or even dried fruit! And once you make this spicy citrus dressing, you’ll have it on repeat, trust me.

One Skillet Salmon with Fennel, Sun-Dried Tomatoes and Olives
by @saratane

Although Easter generally means roast lamb or a spiralized ham, my family typically has seafood as the main attraction. This one skillet salmon is the perfect thing to make for 1-2 people. And it uses long lasting pantry and fridge staples like sun-dried tomatoes and olives! The fresh oregano can easily be subbed out for dried, just use half the amount.

Asparagus with Poached Egg and Parmesan
by @feedtheswimmers

This super easy, but delicious side dish is one you’ll come back to again and again. The vegetal taste of the spring asparagus mixed with the soft and silky poached egg will please any eater! Another bonus--it’s on the table in under 10 minutes.

Carrot Cake Cupcakes with Fluffy Cream Cheese Frosting
by @houseofyumm

As much as I want an entire carrot cake in my home, I have zero control over myself when it comes to cream cheese frosting. These carrot cake cupcakes are the mini treat for this Easter holiday.
