Easter at Home 

Usually the Dolfi family gathers around after Easter Mass for a brunch spectacular. A table filled with quiches, bright, beautiful salads, roast fish, spring veggies, baked goods galore and an Easter egg hunt to cap it off. Although most of us are foregoing our usual plans for Easter this year, it can still be a special holiday spent at home with your loved one (or just yourself!). All of these recipes have ingredient lists you can customize or substitute, just depending on what you have in your fridge and pantry. We hope you celebrate this holiday in whatever way you can.

One Skillet Salmon with Fennel, Sun-Dried Tomatoes and Olives

Although Easter generally means roast lamb or a spiralized ham, my family typically has seafood as the main attraction. This one skillet salmon is the perfect thing to make for 1-2 people. And it uses long lasting pantry and fridge staples like sun-dried tomatoes and olives! The fresh oregano can easily be subbed out for dried, just use half the amount.
