These breakfast burritos are jam packed with everything you’ll want in the morning. Sausage, eggs and hash browns (just to mention a few) all freeze up perfectly. Just grab one, pop it in the microwave for a few minutes and breakfast is served!
Whenever I know I have a busy week ahead of me, I make lasagna on Sunday. Pull it straight out of the freezer the night before and all it takes is a quick pre-heat of the oven and 45 minutes later, dinner is on the table.
Meatballs are the best freezer food! Cook these up and then add them to a sheet tray and slide the tray right into the freezer. Once they’ve frozen, toss them in a bag and put them right back in. Freezing them that way first ensures they don’t clump together.
These black bean and corn patties are a great lunch option. Make a big batch and then freeze them in a stack with parchment paper in between each patty. As soon as the afternoon hunger hits, grab a few patties and microwave them. Serve them on a bun or as a salad!
