Persimmon, Walnut and Feta Salad

"Persimmon, pear & pomegranate seeds with radicchio and watercress, feta, walnuts and a honey, olive oil & white balsamic vinaigrette. If you have never used persimmons, wait until they are ripe, juicy & sweet! They make a wonderfully refreshing and festive addition to a salad."

  • 1 tablespoon olive oil
  • 1/2 tablespoon white balsamic vinegar
  • 1 teaspoon honey
  • 1 small persimmon, sliced
  • 1/2 small pear, sliced
  • 1 tablespoon pomegranate seeds
  • Handful radicchio
  • Handful watercress
  • 1 tablespoon feta cheese
  • 1 tablespoon walnuts, optional


  • Step 1

    In a a jar or container with a tight fitting lid, combine the honey, vinegar and olive oil. Shake well until emulsified.

  • Step 2

    Combine remaining ingredients in a bowl. Toss with dressing.
