This week I'm starting to take note of the changes in temperatures here on the East Coast. I was standing in my apartment vestibule talking to a friend this morning when a nice, unfamiliar (NYC has been HOT HOT HOT!) breeze graced me (oh hello old friend). So here we are with this week's meal plan, which I've decided to dedicate to some more summer-toned-down recipes and slowly letting fall weasel its way in.
Whether or not you're ready for the changing of the season, I'm sure this week's menu will get you excited for dinner every night this week! Get ready for Tofu Soba, DIY Fall salad, veggie enchiladas, and a simple bowl of vegan "beef" and broccoli.
