Good morning guys ✌🏽 This week has been all about devouring these no-bake oat cashew cookies with peanut butter and goji jam filling. We have teamed up with @ceresorganics Again, using their organic pantry staples to make this recipe (including @ceresorganics maca, coconut flour, vanilla extract, chia seeds, coconut butter and rice malt syrup). Here is the recipe! . . 1 cup raw cashews, ground into a rough flour 3/4 cup rolled oats, ground into a flour 2/3 cup almonds, ground into a flour 1/4 cup coconut flour 2 Tbsp maca root powder Good pinch quality salt 3/4 cup rice malt syrup 1/2 cup coconut butter, softened 2 tsp vanilla extract METHOD . 1. Add the top 6 ingredients to a food processor and pulse until very well combined. Add remaining ingredients and pulse to combine. The mixture should hold together like a traditional cookie dough. 2. Turn dough into a floured board, and roll out to your desired thickness (I did roughly 2cm). Use a cookie cutter to cut out cookie shapes, and place onto a lined baking tray. Continue to roll out the left over dough and cut more cookies until you’ve used up all the dough. 3. Set cookies in the freezer, for at least 2 hours. To make the chocolate 200 grams vegan chocolate METHOD 1. Break chocolate into small pieces, and set in heat proof bowl. Melt over a just simmering pan of hot water. Set aside. 2. Remove cookies, and dip each cookie into the chocolate, setting back onto the lined tray. Once all cookies are dipped, set again in the freezer. To make the jam 2 cups raspberries 1 Tbsp coconut sugar 1/2 cup goji berries (soaked in warm water for 30 mins then drained) 1 Tbsp chia seeds METHOD 1. Add all ingredients to a heavy based saucepan and cook over a low heat for 10 mins, stirring occasionally. Once cooked, set aside to cook completely before assembling cookies. Finally, sandwich cookies cookies together with the goji jam and natural peanut butter. **If you don’t know how to soften coconut butter, simply immerse the jar in hot water until softened
Rose and cardamom smoothie bowls- have you tried this combination before? It’s one of my favourites in sweet treats, and always reminds me of travelling. Our local Indian Street Food shop sells vegan rose and cardamom kulfi, and it is totally divine, and the inspiration for these bad boys. . For the smoothie . 3 large frozen bananas (peeled and chopped) 3/4 cup plant milk 2 teaspoons of rose water 1 good pinch of ground cardamon 2 heaping Tbsp vegan protein powder (optional, but I added @kapowdersuperfood strength) 4 Medjool dates, pitted . . Method Add all of your ingredients to a high speed blender and blend on high until very smooth. Pour into two large glasses or medium bowls, and top with edible dried rise petals, fruit, vegan caramel chocolate (optional) and peanut butter. . . For those following the waste free shampoo discussion I’ve decided to first move to bars of shampoo. I’ve found two that I’ll try (@lushcosmetics And @ethiquenz ), both are free of plastics and don’t contain harsh chemicals that pollute our waterways. I’d love to transition into shampoo-free (bicarbonate, lemon juice, vinegar was oils), but I also believe in supporting companies who are already doing the right things, in order for them to grow and continue to do good ???? In particular, @ethiquenz - has anyone tried their bars? Any recommendations? . For conditioner, I’m going to try apple cider vinegar, with maybe some nice oils so I don’t always smell like a salad dressing ????????
Do you do this IG thing for a job? Or is it a hobby? For me, it’s both. Everyday day I pinch myself, knowing It’s a blessed life, when I’ve got nothing better to do than make matching smoothie bowls. Isn’t that so (actually, not exactly. It’s fun, though ?)? To make the purple bowl, blend: 2 frozen bananas, 1/2 cup blueberries, 1/2 cup fresh oat milk, juice from 1 lemon and 1/4 cup coco yoghurt. . To make the pink bowl: blend 2 frozen bananas, 1/4 cup raspberries, 1/3 cup fresh oat milk, 1/2-1 tsp rose water and 1/4 cup coco yoghurt. . We topped our bowls with @sunsol_muesli , and pretty details. . Thanks to everyone for the feedback on waste free options for shampoo/conditioner. The things that intrigued me the most were using only lemon juice to wash (thanks @kokosnussundkarotte - I’m so gonna try this! I think vinegar would work, too) the dry bars (if I can find ones that are non-toxic), and going shampoo free. I only wash my hair once a week, which was a conscious choice. It took some adjustment, but it worked! Any other suggestions out there? For a conditioner? . I’m going to try out the options from @thesourcebulkfoods this week, and see how I go from there!

Soothing Turmeric Latte
Turmeric makes you a better person. Immune boosting, anti-inflammatory, antioxidant, cancer fighting, teeth whitening, warming and delicious. Pop it in your smoothie, in a curry/soup, or make a soothing turmeric latte. Or don't (but you'll feel a little less super human without it).
