This recipe takes your favorite Chinese takeout meal and turns it completely plant-based! Vegan Beef and Broccoli made with a both oyster and dried mushrooms gets tossed in a delicious brown sauce and served with tender broccoli florets.

Mushroom Marinade:
ingredients
- 3 tablepoons corn starch
- 1/3 cup water
- 3 tablespoons vegan oyster sauce
- 1 tablespoon sesame oil
- 1 tablespoon apple cider vinegar
Method
Step 1
Mix all ingredients in a bowl. Set aside.
Vegan Beef:
ingredients
- 3 cups Oyster mushrooms
- 2 cups dried mushrooms,
- 1/4 cup steak seasoning
Step 1
Roughly chop Oyster mushrooms and set aside.
Step 2
Soak dried mushrooms in water for 45 minutes and then drain.
Step 3
In a large bowl coat all mushrooms in steak seasoning then add mushrooms to marinade. Allow to marinate for 45 minutes.
Sauce:
ingredients
- 2 tablespoons mushroom marinade
- 2 tablespoons vegetable broth
- 2 tablespoons minced garlic
- 1 tablespoons maple syrup
- 2 tablespoons coconut aminos
- 2 tablespoons sesame oil
- 2 tablespoons vegan oyster sauce
- 1/4 teaspoon white pepper
- 1/4 teaspoon pink Himalayan salt
- 1/2 tablespoon freshly grated ginger
Step 1
Mix all ingredients in a bowl. Set aside.
ingredients
- 3 cups chopped broccoli
- 2 tablespoons sesame seeds
Step 1
Preheat oven to 450F.
Step 2
Toss broccoli and sesame seeds together, add mushrooms and bake for 15-20 minutes.
Step 3
Coat mushrooms and broccoli in sauce. Serve with rice, quinoa, noodles, or eat plain.
