Smashed Avocado & Tomato Basil Bruschetta Toast

  • 8 slices of French bread, ½ inch thick
  • 3 ripe avocados, smashed
  • 1/4 cup plus 2 tablespoons olive oil, divided
  • 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes, drained
  • 5 basil leaves, chopped
  • 1/2 red onion, diced
  • 2 tablespoons balsamic vinegar
  • Kosher salt and freshly ground black pepper, to taste


  • Step 1

    Preheat oven to broiler setting. Place slices of bread on a baking sheet and drizzle with the 2 tablespoons of olive oil. Broil slices in the oven for about 1-2 minutes on each side or until golden brown. Remove from the oven and set aside.

  • Step 2

    In a medium bowl, combine Red Gold Petite Diced Tomatoes, basil, red onions, 1/4 cup olive oil, and balsamic vinegar. Season with salt and pepper to taste.

  • Step 3

    Spread smashed avocado onto each slice of toast, then generously spoon the bruschetta on top. Garnish with fresh basil or parsley, and serve immediately.
