Things to Prep Ahead This Week: We realize some of the items we rely on from the store each week may be difficult to come by. Here are few basics you might want to consider making yourself to be as resourceful as possible and to add lots of flavor to your pantry meals!

THE RECIPES
Use these as a guide for inspiration. Just because you don't have every single ingredient doesn't mean you can't replicate the main flavor of the dish! 
The Spice is Right!
Reach into that spice drawer to add a little extra flavor to dinner!
The chickpeas are smashed with fresh lemon juice and a little bit of water. Since chickpeas are a legume, they naturally tend to take on a creamy, chunky consistency. By tossing in cucumbers and red onions, the sandwich gets a nice crunch. Coriander provides a mild herbaceous note that complements all of the flavors in the mash perfectly. Layer this on your favorite grain bread topped with microgreens or fresh cilantro, and you’ve got yourself a winning lunch in no time.
 
Spice Swap: Replace the coriander called for in the recipe with an equal amount fennel or cumin seeds.

A delicious weeknight favorite, this easy creamy Chickpea and Cauliflower Turmeric Curry is ready in no time. Loaded with ground spices and highlighting the flavor of ground turmeric, this dish is incredibly flavorful and delicious! Not only is this is a great way to incorporate vegetables and plant protein in your diet, but it's the perfect dish to always keep in your back pocket!

Spice Swap: This recipe calls for turmeric and coriander, but if you don't have either use a curry powder. Curry powder has a good amount of both of these spices.

Fresh Spring and Summer Salads! 
The days are getting longer and hotter, so keep cool with fresh and bright salads! 
 
Cucumber Peanut "Kachumber" Salad by @rachelgurjar

I am sure you are familiar with the popular “kachumber” salad, which consists of chopped up cucumber, onion, and tomato. Basic, but delicious! This salad comes together with just a few ingredients, thus maximizing your time outside sipping those margaritas in the sun. A common thing when making Indian salads is that the “dressing” is not made separately. Citrus juice and oil are directly added to the bowl with all the ingredients and then mixed (easier for you!!). Garnish with lots of cilantro and serve! 

Spice Swap: The crushed red pepper flakes can be switch out for a dash of cayenne!

 Charred Corn Bean Salad by @saharabohoskey

This bean salad has a little crunch from the spiced chickpeas baked until crispy, lots of herbs, and lemon that cuts through the starchiness of beans. Pair this with tempeh, crispy tofu or add in some extra greens - kale, arugula etc!

Spice Swap: If you want to tone down the heat a bit, skip the cayenne pepper all together and stick to just paprika! Red pepper flakes, smoked chipotle powder and sweet paprika are all great sub in for this recipe!

Go for the Grains!
Shelf-stable, full of fiber and protein and super versatile; grains are definitely on our pantry must-have list! Add in different mix-ins like dried fruit and nuts, or top it off with glazed tofu! 
Cranberry Rice with Crispy Shallots and Nuts by @rachelgurjar

For this recipe, it is super important to wash the rice in advance with cold water until the water runs almost clear. Then cook according to package directions. This rice salad is topped with lots of nuts and reconstituted cranberries in a simple lemon dressing which adds a tart and sweet element. Garnish
with crispy shallots, fresh herbs and you are good to go. 

Spice Swap: This recipe only uses whole cumin seeds, but you can easily swap it for ground cumin or even coriander or mustard seeds if you have that in your pantry!

Spicy Maple Ginger and Five Spice Glazed Tofu by @thefeedfeed

Ever wondered how to make crisp & flavorful tofu? We’ve got you covered with this sweet & spicy Maple, Ginger and Five Spice Glazed Tofu stir fry. The tofu is marinated in a mix of Simply Organic Spices, coated in cornstarch and then fried to crisp and golden brown perfection. Serve it with a Simply Organic Ginger and mixed vegetable stir fry and you might just have a new favorite weeknight dinner! 

Spice Swap: Cinnamon, fennel seeds, cloves, anise, and white pepper make up the Five Spice blend, so if you have any of these in your pantry you can swap out the Five Spice for a combination using any of these!

Weekend Bonus

Coconut 'Bacon' by @thefeedfeed

Warning, once you try this sweet, salty, spicy and crunchy Coconut ‘Bacon’ you’ll need a batch at the ready at all times. It’s that good!  Simply Organic Smoked Paprika is key to the flavor here. It lends a gentle heat, a smoky dimension of flavor you can’t get from any other spice, and a lovely sweetness. Simply Organic Smoked Paprika is sourced from peppers grown in the Murcia region of southeastern Spain. You can make a batch of this Coconut Bacon to snack on all summer long! It’s great in salads, on top of sandwiches or eaten by the handful!

Spice Swap: While smoked paprika maybe the key flavor here, you can use a pinch of smoked chipotle powder, cumin, and sweet paprika!
