A lot of things have changed in the past few months in the face of COVID-19, but one thing that remains constant is the need to cook and nourish yourself, or your family. In this weekly guide, we provide recipes that you can easily pull off based on pantry staples and what you might have on hand. We provide tweaks and substitutions you might need, keeping in mind that access to fresh ingredients may be hard to come by. We hope you use it as inspiration to turn out healthy and hearty meals while riding out this storm at home. Stay safe, be well and take some comfort in the kitchen.
Things to Use This Week: Use this as a guide for what to stock up on at the store, or what to grab from your pantry.
Canned Tomatoes
Sweet Potatoes
Powdered Spices
Dried Pasta
Canned Beans
Things to Prep Ahead This Week: We realize some of the items we rely on from the store each week may be difficult to come by. Here are few basics you might want to consider making yourself to be as resourceful as possible and to add lots of flavor to your pantry meals!
Homemade Granola
Homemade Nut Butter
Homemade Bread
Pesto (add extra flavor to sandwiches, pastas & more!)
Use these as a guide for inspiration. Just because you don't have every single ingredient doesn't mean you can't replicate the main flavor of the dish!
The Spice is Right!
Reach into that spice drawer to add a little extra flavor to dinner!
This Moroccan style chickpea soup is full of warming spices like cinnamon and red pepper flakes and rounded out with chickpeas and lentils. The recipe also calls for harissa paste, if you do not have any you can totally substitute with your hot sauce of choice. It won’t be as traditional, but it will still be delicious!

This recipe was developed using cauliflower, but if you only have broccoli, that will work just as well! Also, if fresh is not available to you, use frozen!

Tip: If you find yourself with excess fresh vegetables and want to preserve some for a later date, bring a large pot of water to a boil. Prep the vegetables into the shape you’d like to serve them in (in the case of cauliflower, into florets).  Blanch the vegetables for about 3 minutes, or until crisp and tender. Drain thoroughly on a clean towel, then spread on a parchment lined sheet pan and freeze until firm. Transfer to a freezer safe bag, or container for storage.

Pasta, Pasta, Pasta!
