Miso Glazed Hasselback Potatoes by @cookingforpeanuts

The miso glaze on these potatoes works well on a variety of roasted veggies and tofu! Make a little extra to use whenever you are roasting something up. We like to serve this over rice, and make a double batch so you can use it later in the week!

Feedfeed Tip: To get perfect hassleback slices, place two chopsticks on either side of the potato as you cut to ensure your knife does not go all the way through the potato. 
Maple Glazed Carrots by @lucy_and_lentils

If you wanted to save time, you could repurpose leftover miso glaze from last night, but the maple glaze is super delicious as it brings out the natural sweetness in the carrots!  Serve this with a side of greens and leftover tofu from Sunday.

Time to pull out that leftover rice! This is the kind of weeknight dinner that you can whip up with whatever you have on hand, but the savory shiitake and bitter greens makes for an irresistible combination!

Feedfeed Tip Using leftover rice is key when making fried rice.  Letting the rice dry out for at least overnight allows for each grain to crisp up when you stir fry it.
