Maple Glazed Carrots

Serves or Makes: 4
- 1 pound carrots
- 3 tablespoons maple syrup
- 1 teaspoon olive oil
- 1/ 2 teaspoon salt
- 1/ 4 teaspoon black pepper
For the Dressing
- 2 tablespoons vegan yogurt
- 1/ 2 lemon, juiced
- 1/ 2 teaspoon garlic powder
- pinch salt
- 1 tablespoon fresh pomegranate seeds
- 1 tablespoon crushed pistachios
Preheat the oven to 350ºF.
Using a deep dish, add the carrots and maple syrup with the olive oil and toss until all coated, then sprinkle with a generous pinch of salt and pepper.
Roast in the oven for 40 minutes, turning after around 30 minutes just to make sure each side is evenly coated.
Mix all the dressing ingredients together, then drizzle over the roasted carrots. Garnish with pomegranate seeds and crushed pistachios.
