Berry and Mandarin Fruit Salad with Walnuts

"Happy belated New Year, friends! I’ve missed you! Our year got off to a slow start when Zoella got a stomach bug on NYE. We’d planned to have friends with a toddler and a baby over to celebrate but canceled in favor of snuggles and a movie. Zoella was bummed though, and even as she climbed into bed at 11:30 pm feeling completely crummy, she asked if we could still have the party. So when she was back to her perky self this weekend, we hosted a few friends for a brunch “party” (at least we called it that for Z;) • I made mochi cake muffins and quinoa bowls with roasted cauliflower, romesco sauce, hazelnuts, and fresh ricotta. @tiffanyninmer showed up with this picture perfect bowl of “salad fruit,” as Zo called it - mandarins, blueberries blackberries, coconut, mint, and walnuts. Swoon!"

ingredients

  • 3 mandarin oranges, peeled and divided
  • 2 cups Blackberries
  • 1 cup Blueberries
  • 1/2 cup coconut chips
  • 5 leaves mint, chopped
  • 1/3 cup walnuts

Method

  • Step 1

    Mix fruit, coconut, mint and nuts together in a bowl. Serve.
