  • 1/3 cup fresh parsley
  • 1/4 cup red wine vinegar
  • 5 large garlic cloves
  • 1/4 cup fresh oregano
  • 1 1/2 teaspoons red pepper flakes
  • 1/2 cup olive oil
  • 1 (14.5 ounce) can Muir Glen Organic Petit Diced Fire Roasted Green Tomatoes
  • Kosher salt and freshly ground black pepper, to taste
  • Red onion, minced for garnish
  • Plantain chips, to serve

Method

  • Step 1

    Blend or food process parsley, red wine vinegar, garlic cloves, oregano, red pepper flakes, olive oil, and Muir Glen Organic Petit Diced Fire Roasted Green Tomatoes until smooth.

  • Step 2

    Season with salt and freshly cracked black pepper, to taste.

  • Step 3

    Garnish with minced red onions and derve with plantain chips.
