ingredients

  • 3 eggs, seperated
  • 80 grams milk
  • 40 grams avocado oil
  • 40 grams cake flour
  • 7 grams matcha powder
  • 40 grams sugar
  • 1/2 teaspoon lemon juice
  • 50 grams sweet Azuki beans, optional

Method

  • Step 1

    Preheat the oven to 270°F.

  • Step 2

    In a medium bowl, combine the milk, oil and egg yolks. Whisk well to combine.

  • Step 3

    Sift the cake flour and matcha powder into the same bowl, and mix well.

  • Step 4

    In a large bowl, beat the egg whites and lemon juice with an electric hand mixer until foamy. Gradually add the sugar and beat until stiff peaks form and the egg whites are glossy.

  • Step 5

    Gently fold the whipped egg whites into the yolk mixture in three increments. (Adding Azuki bean at this step)

  • Step 6

    Pour the batter into the prepared pan. Bake for 60 minutes.

  • Step 7

    Increase the oven temperature to 300°F and bake for 10 minutes more.

  • Step 8

    Remove the cakes from the oven and cool the cake upside down. Once cool to the touch, sliding an offset spatula around the edges to release the cakes from the pans.
