ingredients
- 3 1/2 cups old fashioned oats
- 2 cups flour
- 1 cup brown sugar, packed
- 1 tablespoon cinnamon
- 1/2 teaspoon sea salt
- 1 cup butter, melted
- 1 tablespoon vanilla extract
- 1 cup jam / fruit spread
Method
Step 1
Preheat oven to 350°F. Line an 8x8” baking pan with parchment paper, set aside.
Step 2
In a large bowl combine oats, flour, brown sugar, cinnamon and sea salt, mix well.
Step 3
Melt butter in a microwave safe container. Add melted butter and vanilla to dry ingredients, mixing well until it comes together in clumps.
Step 4
Evenly press ⅔ of the crumb mixture firmly into the bottom of the parchment lined baking pan. Add jam to the top of the pressed bottom crumb layer and spread out evenly. Evenly sprinkle the remaining crumb mixture over the top and gently press into the jam.
Step 5
Bake for 25-30 minutes until the top is golden brown or until jam is bubbling out of the edges. Let cool for about 45 minutes, then cut into squares. (For easier cutting, let bars chill overnight in the fridge.) Bars can be kept in an airtight container at room temperature or in the fridge.
