ingredients

  • 1 ripe banana
  • 1 large egg
  • 1/2 cup unsweetened apple sauce
  • 2 tablespoons dark brown sugar
  • 1 tablespoon sugar
  • 2 tablespoons oil (olive, avocado, or vegetable)
  • 1 pinch kosher salt
  • 3/4 cup old fashioned oats
  • 3/4 cup old fashioned oats, blended into flour
  • 1/4 teaspoon baking soda
  • 1/4 cup Nutella
  • Holiday Sprinkles, optional*

Method

  • Step 1

    Preheat oven to 350F degrees. Line a baking sheet with parchment paper.

  • Step 2

    Combine mashed banana in a medium mixing bowl with egg, apple sauce, brown sugar, sugar, oil, and pinch of salt. Whisk well.

  • Step 3

    Add oats and baking soda. Mix until well incorporated. [Note: The dough will be wet.]

  • Step 4

    Scoop dough into 10 medium sized cookies onto prepared baking sheet.

  • Step 5

    Pat to flatten dough to ¼ inch thick and bake for 14-16 minutes until middle bounces back when poked.

  • Step 6

    Let cool on baking rack for 10 minutes.

  • Step 7

    Add nutella to a piping bag (or ziplock bag) and drizzle on the cookies.

  • Step 8

    Top with holiday sprinkles if desired.
