"i love when pineapple fried rice is served inside a pineapple. here's how i make the pineapple boats. i usually run a paring knife around the edges and then make 2 long cuts on the inside (right next to the hard core). then, i cut the strips of pineapple into smaller chunks so that they're easier to scoop out. you'll probably need to run the knife under some of the chunks to dislodge them. after you've scooped out as many chunks as you possibly can, pour out any residual juice and scoop the fried rice in there. SO GOOD"
