MONDAY Roasted Carrot Harissa Soup

Turn a sheet pan of roasted carrots into a spicy bowl of hot soup with the help of a blender, coconut milk, harissa, and plenty of vegetable stock. Serve this soup with [vegan] grilled cheese or garlic bread and garnish with tender herbs, chili oil, and toasted nuts and seeds.

WEDNESDAY Teriyaki Salmon Bowls with Lemon Tahini Sauce

A serving of slightly sweet, creamy, sticky coconut rice is the perfect base with umami-packed, low and slow-cooked salmon, savory charred broccoli, and a slightly tangy, nutty, toasty lemon-tahini drizzle.
THURSDAY Chicken Thighs with Honey Miso Turnips

This dish starts by searing chicken thighs until golden. Turnips are added to the pan drippings along with an umami-rich pantry sauce sauce with miso, honey and chili. The whole pan is put in the oven to continue to simmer. About 20 minutes later, what emerges is perfectly brown, juicy chicken, tender turnips and a silky, savory sauce.
