For the eggnog

ingredients

  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 1 cup heavy whipping cream
  • 2 cups whole milk
  • 1 teaspoon ground nutmeg
  • pinch of salt

For the eggnog

Method

  • Step 1

    Warm the milk and cream in a saucepan over medium heat until just starting to bubble around the edges, 6-8 minutes.

  • Step 2

    Meanwhile, whisk the egg yolks together in a separate large bowl. Slowly whisk in small amounts of the warm milk into the eggs to temper them (and not scramble them!).

  • Step 3

    Return the eggnog to the sauce pan to medium heat and continue to cook, stirring gently, until thickened and reaches 160°F, about 10 minutes (do not boil). Strain the mixture through a fine mesh sieve into a container for serving.

  • Step 4

    Serve warm or chilled.

For Nutella eggnog

ingredients

  • 1/2 cup Nutella

For Nutella Eggnog

  • Step 1

    Follow the steps above. Then whisk in Nutella with the simmering milk/cream mixture until smooth.

For Gingersnap Eggnog

ingredients

  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • pinch of ground cloves
  • 1 cup brandy

For Gingersnap Eggnog

  • Step 1

    Follow the steps above. Add ground ginger, ground cinnamon, vanilla extract, ground cloves to the milk mixture, and brandy to the finished batch.

For Maple Bourbon Eggnog

  • 1/3 cup maple syrup
  • 1 cup bourbon

For Maple Bourbon Eggnog

    Follow the steps above. Whisk in maple syrup and bourbon to the warm finished batch.

For Coconut Rum Eggnog

ingredients

  • 2 teaspoons coconut extract
  • 1/2 cup coconut shreds
  • 1 cup spiced rum

For Coconut Rum Eggnog

  • Step 1

    Follow the steps above. Add in coconut extract and coconut shreds to the milk mixture while simmering. Strain milk mixture before tempering with eggs. Add in spiced rum to the finished batch.
