ingredients
- 3 bananas, mashed
- 1 1/4 cup almond flour
- 1 1/4 cup 1:1 gluten free flour
- 1/4 cup coconut oil
- 1/2 cup plant based milk
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon sea salt
- Pinch of cinnamon
- 1/4 cup fresh blueberries
- 1/4 cup coconut or turbinado sugar
Method
Step 1
Preheat the oven to 350. Line a loaf pan woth parchment paper. Mash your bananas in a bowl or on a plate. Combine your almond , gluten-free flour, baking soda, baking powder, cinnamon and sea salt in one bowl.
Step 2
In a seperate bowl combine your wet ingredients: bananas, coconut oil, vanilla and plant milk. Once mixed add your wet ingredients into your dry and mix until smooth-ish. Fold in your blueberries.
Step 3
Pour batter into your lined loaf dish and sprinkle your sugar on top. Bake for 45 mins. Remove and let cool. Enjoy!
