Biscuit Base
- 1/2 packet Digestive biscuits (12 pieces) or cookie of choice
- 60 grams unsalted butter

Pistachio Filling
- 1/2 packet kataifi pastry, room temperature
- 25 grams unsalted butter
- 1 cup softened pistachio cream
- 2 tablespoons tahini

Chocolate Layer
- 200 grams milk chocolate
- 1 teaspoon oil of choice

Method
Step 1
First process the biscuits into a fine crumb, mix through melted butter & press into a lined brownie tray. Refrigerate.
Step 2
Cut the kataifi unto 1cm pieces. Melt the butter in a pan & start browning the pastry stirring occasionally for approximately 8 minutes. Be careful as this can burn, remove when they’re a golden color.
Step 3
Add the kataifi to a bowl & allow to cool slightly, add the softened pistachio spread, and tahini. Mix until well combined. Press this over the biscuit layer evenly. Refrigerate.
Step 4
Chop up the chocolate & place it into a heatproof jug with the oil, microwave at 30 second bursts stirring until melted & smooth. Pour the chocolate over & spread evenly. Refrigerate until chilled, approx 2-3 hours.
Step 5
Serve out chilled or at room temperature, in hot weather chilled is recommended.
