Crock Pot Sweet Potato Beef Stew

ingredients

  • 2 pounds beef stew meat
  • 2 sweet potatoes, peeled and diced
  • 2 stalks celery, diced
  • 3 whole carrots, peeled and sliced
  • 1 cup frozen corn
  • 1 can (14.5 ounce) Red Gold diced tomatoes
  • 1 cup onion, diced
  • 1 can (6 ounce) Red Gold tomato paste
  • 1 teaspoon kosher salt, plus more to taste
  • 1 teaspoon black pepper, plus more to taste
  • 2 teaspoons paprika
  • 1 bay leaf
  • 1 tablespoon minced garlic
  • 1/4 cup Worcestershire sauce
  • 1 1/2 cups beef stock
  • Chopped parsley, for garnish

Method

  • Step 1

    Place all of the ingredients in a crock pot.

  • Step 2

    Cover and cook on low for 7 hours or on high for 4 hours.

  • Step 3

    When ready to serve, remove the bay leaf, stir the ingredients together and season to taste.

  • Step 4

    Serve in bowl and top with fresh parsley before serving.
