ingredients

  • 3 slices bacon
  • 1 shallot, minced
  • 1 10 ounce bag Cascadian Farm Frozen Sweet Peas
  • 1/4 cup fresh mint, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 2 scallions, thinly sliced

Method

  • Step 1

    Using a sharp knife, cut the bacon into small pieces.

  • Step 2

    Heat a large skillet over medium-high heat.

  • Step 3

    Add the bacon and cook, stirring occasionally, for 4-5 minutes, or until beginning to crisp.

  • Step 4

    Stir in the minced shallot and cook 1-2 minutes, to soften.

  • Step 5

    Add the Cascadian Farm Frozen Sweet Peas and cook until heated through.

  • Step 6

    Remove from the heat and stir in the mint, parsley, and scallions.
