Hello May! Check out this collection of light and delectable recipes for the first week of the month. 

Start your Monday off right with this delicious Shiitake Mushroom Miso Broth with Udon and Ginger Squash. On Tuesday, try this Spring Pea, Radish and Avocado Salad for a lighter meal. Go for this fantastic "Meatball" Bowl with Broccolini and Garlic Bread Croutons meal on Wednesday. It's hearty, but not too heavy, so it won't leave you feeling too full. Finally, for Thursday, we've added this Coconut Panko Crusted Tofu with Mango Avocado Salad. There will undoubtedly be enough leftovers to last you over the weekend or for lunch the following days.
