There’s nothing that I have made thus far that taught me the importance of detail as much as this recipe. At first glance this recipe is a little intimidating. With 4 distinct parts you might think, “I ain’t got no time for that.'' But once you realize how the tangy pickled cucumbers, the umami rich Kimchi slaw and the sweet and spicy glaze can all be made ahead, you only need to think about frying chicken, which literally takes 20 minutes.
I won’t lie I was intimidated, but the flavours in this dish are all of my favorite things. Move over Samin (but Respect, Kitchen Goddess!), my first cookbook will be titled Sweet, Tangy, Spicy, Repeat. And that’s exactly what this dish is, from the fried chicken glaze, to the creamy kimchi slaw and sweet brioche. Now I am convinced how essential this dish is for your next summer soirée! With that said I have a few suggestions to help you meal prep this dish for your next party or for an easy family dinner.
First, for the pickled cucumbers, cut them thick. This will enable you to leave them overnight in the brine and still will ensure that crunch. For the Kimchi slaw, I used purple cabbage, mainly because of my preference for the color and it was a lovely addition to the sandwich! Now, I will drop some serious knowledge on you guys, Kewpie mayo is NOT NEGOTIABLE, the flavor is far superior from anything I have ever had and makes any slaw, potato or pasta salad divine. Trust. Ahh I’m salivating by the mere thought of it.
Now, I get it if you’re not about that fried chicken life — #TeamFeedfeed would beg to differ — but if you want to grill your chicken, more power to you. What I will leave you with is this, I made 4 large sandwiches cut into quarters and with a blink of an eye they were all devoured. The umami rich sandwich is something I'll be making often. This umami rich sandwich is something I'll be making often (the kimchi slaw changed my life). I’m a better person for making it and you will be too!
