Fancy Blue Corn Crepes with Nutella

ingredients
- 1/4 cup roasted blue corn
- 3/4 cup all-purpose flour
- 1 tablespoons granulated sugar
- 1/4 cup heavy cream
- 3/4 cup water
- 2 large eggs
- 2 tablespoons unsalted butter, melted and cooled
- 1/4 cup Nutella
- Strawberries (optional), diced
Method
Step 1
In a food processor or blender, add all ingredients and blend until smooth.
Step 2
On medium heat, warm up crepe pan.
Step 3
Ladle out ¼ cup batter and pour into the center of pan. Quickly lift pan from heat and evenly spread out batter to about 6-7 inches wide.
Step 4
Once bubbles start to form in the center of the crepe, flip over and cook the other side for 30-60 seconds.
Step 5
Drizzle on you Nutella and serve with your favorite fruit
