ingredients

  • 14 ounces vegan dark chocolate chips
  • 5 tablespoons solid coconut oil
  • 1 1/3 cups sugar
  • 1 1/2 teaspoons vegan egg replacer
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 4 ripe bananas
  • 1 1/3 cups self-rising flour
  • 2/3 cups all-purpose flour

Method

  • Step 1

    Preheat the oven to 350˚F, and grease and line an 8x8" pan. In a small saucepan over medium heat, melt half of the dark chocolate chips and coconut oil until smooth. Remove from heat, and set aside to cool.

  • Step 2

    When cool, stir in the sugar, egg replacer, vanilla extract, and salt. Mash bananas into the batter with a fork or masher.

  • Step 3

    Add the flour, and stir until just combined. Fold in the remaining chocolate chips, then pour batter into prepared pan.

  • Step 4

    Bake for 40 minutes, or until a toothpick inserted in the middle comes out clean.
