Scrambled Egg and Avocado Toast

We're suckers for a classic avocado toast. But top it with scrambled eggs and we're running to the breakfast table! Topped simply with chives and red pepper flakes, this is a foolproof recipe.

Serves or Makes: 2


  • 1 tablespoon butter
  • 2 eggs
  • 2 tablespoons milk
  • 1/ 2 avocado, sliced
  • 2 slices of bread, toasted
  • Kosher salt and pepper, to taste
  • chives, for garnish
  • crushed red pepper flakes, for garnish


  • Step 1

    Add the butter to a medium skillet on low heat. While the butter is melting, whisk together eggs, milk and salt and pepper in a small bowl.

  • Step 2

    Once the butter has melted, add in the egg. Allow the outsides of the egg to set. Use a spatula to gently fold the cooked egg into the center to allow the runny egg to cook.

  • Step 3

    Repeat this process once or twice more. You want to minimise the number of times you touch the egg to end up with sumptuous folds.

  • Step 4

    Turn off the heat just before you think the eggs are ready as they will continue to cook in the heat of the pan.

  • Step 5

    Pile the eggs onto one slice of the toasted bread and top with chives. Add the avocado onto the second piece of bread and top with red pepper flakes. Enjoy!
