"SPANISH TORTILLA- NEW RECIPE I had too many potatoes and eggs in the pantry of course the first thing that came into my mind was tortilla. I made this as simple as possible with around 5 ingredients. Have this with a nice summer salad, tomatoes, rice, or do what I did and have it with another tortilla! (Yes, i made two?) You can remix this and add mixed peppers, cheese, vegetables, meat, pretty much anything."

This beautiful Spanish Tortilla is made with six simple ingredients you probably already have around the house! This tortilla is crispy on the outside and soft on the side and is made by frying onions and potatoes in olive oil and then incorporating them into eggs.

ingredients

  • 1/2 cup olive oil
  • 2 onions, thinly sliced
  • 3 potatoes, peeled, quartered and thinly sliced
  • 6 large eggs
  • Kosher salt, to taste
  • Freshly cracked black pepper, as needed

Method

  • Step 1

    In a skillet, eat the olive oil over medium heat.

  • Step 2

    Add sliced onions and cook until translucent. Stir occasionally to ensure the onions do not burn.

  • Step 3

    Add sliced potatoes and cook until tender. About 5-10 minutes.

  • Step 4

    Add onion, potato and oil mixture to a bowl. Add six eggs, stir to combine and break the eggs. Then cover the bowl with aluminum foil for 5-10 minutes.

  • Step 5

    Return the egg mixture to a skillet and cook undisturbed until the bottom and edges have set. Using a spatula, tuck the edges of the tortilla under. Now let it cook until it has mostly cooked through and set completely.

  • Step 6

    Use a plate to cover the skillet, flip and the slide the tortilla back into the skillet to cook. Leave to cook for an additional 5 minutes. Turn off heat and allow to set.

  • Step 7

    Remove from skillet, slice and serve.
