Rigatoni with Chicken in a Creamy Tomato Sauce

ingredients
- 1 1/2 box Rigatoni
- 3 Chicken Breasts
- 1/2 teaspoons salt
- 1/4 teaspoons pepper
- 2 tablespoons butter
- 1 onion
- 3 garlic cloves
- 16 ounces tomato paste
- 1 teaspoon smoked paprika
- 1/4 teaspoons crushed red pepper
- 1 cups white wine
- 1 1/2 cups cream
- 3 cups baby spinach
- 1/2 cups grated parmesean
- 1/2 cups pasta water
Method
Step 1
Cook rigatoni according to box instructions. Reserve 1/2 C of the pasta water.
Step 2
Heat oil in large pan on medium heat. Season chicken with salt, pepper, smoked paprika. Add chicken and sear both sides till golden brown. Remove, set aside and slice.
Step 3
Add butter to the pan, once melted add onion and garlic, cook till soft. Add wine and let reduce 2 minuets. Add tomato paste, pasta water, paprika and crushed red pepper. Stir and cook 3-4 min. Stir in cream and spinach. Bring to simmer, add chicken and Parmesan. Stir in cooked pasta
Step 4
Garnish and serve with additional crushed red pepper, parmesan, basil or chopped parsley.
