This might be my favorite dessert on earth—I don't know why it’s taken me so long to share it with you!
It all starts with that delicious cookie crust—remember it’s made in a food processor so there’s no excuse not to make it.
That cookie crust then gets pre baked and filled with my honey-sweetened lemon curd.
One, I love desserts that are naturally sweetened. And two, the honey adds depth and nuance to the curd while also striking that perfect balance of sweet and tart. So many lemon curds are cloyingly sweet—not this one.
