We love this stunning gluten free apple cake. It uses gluten free flour and oat milk to give it a soft, moist texture. Top it off with your favorite ice cream for a delicious dessert!

For the Base

ingredients

  • 1 1/4 cups gluten-free all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 large egg
  • 1 tablespoon baking powder
  • 3/4 cup oat milk
  • 2 Granny Smith apples, peeled, cored, and sliced thin
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon

Method

  • Step 1

    Preheat oven to 350ºF. Line a square baking pan with parchment paper.

  • Step 2

    In a stand mixer add the flour, sugar and baking power. Mix on low. Add the softened butter and continue mixing on low.

  • Step 3

    Add the egg and oat milk and mix well on medium speed.

  • Step 4

    In a small bowl mix the brown sugar with the cinnamon.

  • Step 5

    Spread 1/2 the batter into the lined baking pan. Sprinkle 1/2 the cinnamon mixture over the batter. Spread the remaining batter evenly into pan. Top the batter with the apple slices, pressing them into batter. Sprinkle the other 1/2 of the cinnamon mixture over the apples and bake in oven for 50-55 minutes. Remove and cool.
