Peanut Butter, Banana, Raspberry Chia Jam Sandwich
There's something delicious about a nostalgic breakfast like the classic PB & J sandwich. If you want to step it up, though, then add a banana to the mix! Slices of fruit bulk up your meal and pair perfectly with the homemade chia jam. It's totally vegan, and if you use a gluten free bread then it'll fit that bill too!
- 16 ounces raspberries
- 1/2 orange, juiced
- 1 teaspoon orange, zest
- 1/2 cup warm water
- 1/3 cup maple syrup
- 3 tablespoons chia seeds
Place all ingredients together in a small pot. Bring to a simmer and cook for 5 minutes. Mash the raspberries gently with a fork.
The jam will thicken as it cools. Store in an airtight jar in the fridge.
