ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 red onion, chopped
- 2 (14 ounce) cans jackfruit, drained, rinsed, and chopped
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 (16-ounce) jar Otamot Spicy Organic Sauce
- Tortillas, warmed, for serving
- Radishes, sliced, for garnish
- Cilantro, for garnish
- Avocado, sliced for garnish
- Jalapeño, sliced for garnish
Method
Step 1
In a large, deep-sided skillet, add olive oil and heat over medium-low heat. Add garlic and red onion and cook for about 5 minutes, or until softened.
Step 2
Add chopped jackfruit and season with cumin and smoked paprika, tossing the jackfruit until well coated. Add the Otamot Spicy Organic Sauce and increase heat to medium.
Step 3
Let simmer for about 5-7 minutes, or until the jackfruit has softened. Remove from heat and mash with a fork or potato masher until the desired shredded texture is achieved.
Step 4
Serve shredded jackfruit in warm tortillas topped with radish, cilantro, avocado and jalapeño.
