We partnered with Bob’s Red Mill to bring you these Gingerbread Linzer Cookies with Fresh Ginger Cream  made using their Whole Wheat Flour. This adorable holiday cookie is the sweet treat that you never knew you needed. The luscious cream cheese filling gets its irresistible flavor from fresh ginger, making these eye-catching confections an absolute must for your next holiday party.

Let's be honest–holiday baking is *all* about the cookies, and that's exactly why you should plan on whipping up a batch of these beauties. The combination of Bob's Red Mill Whole Wheat Flour and toasted pecans in the cookie dough makes for an ultra nutty, hearty cookie, while molasses and a combination of warm spices provide a rich, aromatic flavor. Sandwiched between the cookies is a tasty ginger cream that comes together in minutes. It doesn't get much more festive than these. Don't have linzer cookie cutters? Use a biscuit cutter or whatever you have on hand–they'll still taste delicious!
 
 
Ingredients:

For the Gingerbread Cookies:
1 cup unsalted butter, room temperature
3/4 cup pecans, toasted
3/4 cup dark brown sugar, divided
2 tablespoons molasses
1 large egg, room temperature
1 teaspoon pure vanilla extract
2 cups Bob’s Red Mill Whole Wheat Flour
1/2 teaspoon baking powder
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon kosher salt
2 tablespoons confectioners sugar, for dusting

For the Ginger Cream Filling:
1/4 cup butter, room temperature
4 ounces cream cheese, room temperature
1 tablespoon finely grated fresh ginger
2 cups confectioners sugar
1/4 teaspoon pure vanilla extract
