We used Bob's Red Mill All Purpose flour and polenta to put together this epic sweet and savory DIY waffle bar perfect for Mother's Day! You can make the waffles ahead and reheat them in the oven when guests arrive and prep all of the toppings ahead so all you have to do is set everything out and let guests get creative! For the Savory Waffles
ingredients
- 1 3/4 cups Bob's Red Mill Organic All Purpose Flour
- 1/2 cup Bob's Red Mill Polenta
- 1 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- freshly ground black pepper, to taste
- 1 1/2 cups milk
- 3/4 cup plain Greek yogurt
- 2 large egg whites
- 4 tablespoons unsalted butter, melted and cooled
- 2 cups grated sharp cheddar cheese
- 2 tablespoons minced chives
- Hot Sauce, optional
- for serving: fried egg, poached egg, avocado, smoked salmon, creme fraiche
For the Savory Waffles
Method
Step 1
In a large bowl whisk together the flour, polenta, baking soda, baking powder and black pepper. Set aside. In a separate bowl, combine the the milk, greek yogurt, and egg whites. Whisk until well combined.
Step 2
Whisk the wet ingredients into the dry ingredients and mix until just combined. Stir in the melted butter, then add the cheese, chives and hot sauce (if using).
Step 3
Let batter rest while you preheat your waffle iron. Grease waffle iron with butter or nonstick spray and cook batter according to the instructions that came with your machine*.
Step 4
Top waffles with savory items of choice such as fried eggs, poached eggs, avocado, smoked salmon and/ or creme fraiche. *Note: We cooked our waffles for about 4-5 minutes, or until the batter stopped steaming.
For the Sweet Waffles
ingredients
- 2 cups Bob's Red Mill Organic All Purpose Flour
- 1/2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 tablespoons powdered sugar
- 1 cup milk
- 3/4 cup yogurt, (plain or greek)
- 2 egg whites
- 1 teaspoon vanilla extract
- 3 tablespoons unsalted butter, melted and cooled
- For serving: Mango, Blueberries, Strawberries, Kiwi, Blackberries, Maple Syrup, Jam, Whipped Cream Fresh Citrus, Raspberries
For the Sweet Waffles
Step 1
In a large bowl, whisk together the flour, salt, cinnamon, baking soda, baking powder and powdered sugar. In a separate small bowl, whisk together the milk, yogurt, egg whites and vanilla.
Step 2
