ingredients
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 1 24-ounce bag Cascadian Farm (Powered by Plants) Frozen Grains, Vegetables and Legumes Mix
- 1 packet taco seasoning, about 2 tablespoons
- 2 cloves of garlic, minced
- 1 lime, juiced
- pinch of salt
- 8 small tortillas
- pico de gallo, cilantro, salsa, guacamole, sour cream, and crumbled cheese, for serving, optional
Method
Step 1
Heat olive oil in a large skillet over medium-high heat. Add onion and cook for about 5 minutes until tender.
Step 2
Add grain blend, taco seasoning, garlic, lime juice and a pinch of salt, stirring to combine. Reduce heat to low and cook for about 8-10 minutes, or until rice is soft, stirring occasionally.
Step 3
Spoon mixture into corn tortillas and top with your favorite taco toppings.
Step 4
Tip: Feel free to get creative - you don’t have to use taco seasoning! Add spices like garlic powder, onion powder, cumin, chili powder, salt, and pepper.
