ingredients
- 6 cups of water, + an additional 1/2 cup for desired consistency
- 2 cups red lentils
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1/2 inch ginger, sliced
- 1 tablespoon tomato paste
- 1 tablespoon salt
- 1/4 teaspoon red pepper flakes
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cumin
- 1/8 teaspoon turmeric
- 1/8 teaspoon cayenne
- 1/8 teaspoon coriander
- Black pepper
Method
Step 1
Place a medium sized pot on the stove and warm over medium high heat for about one minute. Gently crush the ginger with the back of a spoon. Add the olive oil and let warm for a little under one minute before adding the garlic and the crushed ginger. Reduce the heat to medium and sauté the garlic and ginger until golden brown and fragrant.
Step 2
Add the lentils and stir to coat with the oil before adding the spices, the salt, the black pepper and the water. Cover and bring to a boil. Once boiling, reduce the heat to a simmer and let cook until the lentils are tender, about 20 minutes.
Step 3
Stir in the tomato paste and add the additional 1/2 cup of water if a looser consistency is desired. If a smoother consistency is desired, carefully blend with an immersion blender or ladle the soup into a blender to mix until smooth. Optionally serve with a splash of coconut milk and some fresh parsley or cilantro. Ladle into bowls and enjoy!
