Method
Step 1
For the Vegan Tzatziki: In a blender or food processor, combine the vegan yogurt, tofu, and garlic. Blend until smooth and thick, resembling Greek yogurt.
Step 2
Transfer the mixture to a bowl. Stir in grated cucumber, fresh dill, salt, and black pepper until fully combined.
Step 3
Adjust seasoning to taste.
Step 4
Tzatziki can be stored in the fridge in a sealed container for up to 5 days.
Step 5
Prepare the Chickpeas: Preheat the oven to 400°F.
Step 6
In a bowl, toss the drained chickpeas with olive oil, smoked paprika, garlic powder, dried basil, salt, and black pepper until evenly coated.
Step 7
Spread the seasoned chickpeas on a baking sheet in a single layer.
Step 8
Roast for 20-25 minutes, shaking the pan halfway through, until crispy and golden brown.
Step 9
Assemble the Gyros: While the chickpeas are roasting, warm the pita bread in the oven or on a skillet for 1-2 minutes until soft.
Step 10
Spread a generous amount of vegan tzatziki inside each pita.
Step 11
Fill with roasted chickpeas and your choice of sliced cucumbers and/or red onions.
Step 12
Garnish with fresh parsley and drizzle with extra tzatziki if desired. Enjoy!
