  • 1 1/2 cups unsweetened vegan yogurt (coconut or soy recommended)
  • 1 cup extra-firm tofu, drained and crumbled
  • 3 garlic cloves, minced
  • 1/2 large (~1 cup) cucumber, grated
  • 1/4 cup fresh dill, chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil (optional), for serving

  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 3 high-protein pita breads
  • Fresh parsley, for garnish
  • Sliced cucumbers and/or red onions (optional), for topping

Method

  • Step 1

    For the Vegan Tzatziki: In a blender or food processor, combine the vegan yogurt, tofu, and garlic. Blend until smooth and thick, resembling Greek yogurt.

  • Step 2

    Transfer the mixture to a bowl. Stir in grated cucumber, fresh dill, salt, and black pepper until fully combined.

    Adjust seasoning to taste.

  • Step 4

    Tzatziki can be stored in the fridge in a sealed container for up to 5 days.

    Prepare the Chickpeas: Preheat the oven to 400°F.
