Sweet Red Pepper Relish

"During the warm, warm summer, we spend most weekends at a lake in Kentucky. When we aren't lucky enough to catch any fish to fry (and that's pretty often....), we run down the road to this tiny little restaurant that lures you in with unlimited hush puppies. Seriously. They have this Sweet Red Pepper Relish there that is the most addictive condiment I've ever had. Y'all... I've had a LOT of this stuff. So good on just about everything-- burgers, beans, bagels, crackers with cream cheese. Finally, I cracked the code and made my own. If I must say... I think I have them beat.
