Rose Water Italian Wedding Cookies

This recipe is featured in our 2021 Holiday Cookie Roundup! These rosewater and cardamom flavored cookies are dusted with pink powdered sugar made with freeze-dried strawberries.

  • 1/ 2 cup unsalted butter, softened
  • 1/ 4 cup powdered sugar
  • 1/ 2 teaspoon ground cardamom
  • 1/ 4 teaspoon kosher salt
  • 3/ 4 cup almond meal
  • 2 teaspoons rose water
  • 1 teaspoon vanilla extract
  • 1 1/ 2 cups all-purpose flour
  • 3 tablespoons powdered sugar
  • 2 tablespoons freeze dried strawberries


  • Step 1

    Preheat the oven to 325°F (163°F) and line a baking sheet with If You Care Parchment Paper.

  • Step 2

    In a medium bowl, add the butter, powdered sugar, cardamom, and salt, and whisk until well combined. Add the almond meal, rose water and vanilla and mix for 1 minute. Fold in the flour until you have a smooth cookie dough.

  • Step 3

    Take 2 tablespoons (30 g) of dough, roll it into a smooth ball, and place on a parchment-lined baking pan, placing each cookie 2 inches (5 cm) apart. Repeat until you have used up all of the dough. Place the baking sheet into the freezer for 10 minutes.

  • Step 4

    Bake the cookies for 20-25 minutes or until the bottoms are just golden brown. Cool completely on a rack.

  • Step 5

    To make the pink powdered sugar, blend powdered sugar and freeze dried strawberries until fine. Sift into a bowl. When the cookies are cool, roll the cookies in the powdered sugar and enjoy!
