This luscious custard treat is finished off with a crunchy layer of caramelized sugar. What more could you ask for? From citrus to vanilla to chocolate to tea, there are so many flavors that you can infuse into your prized dessert. Pick out some cute ramekins and make this dessert (which isn't as intimidating as it looks!) for your next dinner party!

ingredients

  • 900 grams heavy cream
  • 2 vanilla beans, or 20 grams vanilla extract
  • 170 grams sugar
  • 10 egg yolks
  • Brown sugar, for topping

Method

  • Step 1

    Preheat oven at 300F/150C.

  • Step 2

    Open your vanilla beans and take of the seeds. Add the vanilla and the heavy cream to a pot. Boil this mixture. Cover with a lid and let infuse of 15 minutes.

  • Step 3

    Once the 15 minutes have gone by, add the sugar and egg yolks into a bowl.

  • Step 4

    Pour the cream and vanilla into the egg yolks and sugar mixture. Do this gradually.

  • Step 5

    Add this mixture into the ramekins. Make sure that the mixture fills ¾ of the ramekin.

  • Step 6

    Bake for 40-45 minutes.

  • Step 7

    Remove and let the ramekins cool for about 30 minutes.

  • Step 8

    Add brown sugar and blow with a torch.
