ingredients
- 20 Soft Shell Clams in Shell from Maine, scrubbed
- 2 tablespoons extra-virgin olive oil
- 5-6 cloves fresh garlic, minced
- 1 cup white wine
- 2 tablespoons butter
- 1/2 cup fresh parsley, chopped
- red chili flakes, optional
- crusty bread or cooked pasta, for serving
Method
Step 1
Soak Soft Shell Clams in Shell from Maine in cold fresh water for 20 minutes to loosen debris. Scrub outside of shells with sponge or dish brush. Rinse.
Step 2
Heat olive oil in a pot over medium heat. Add garlic and sauté until fragrant. Be careful so the garlic doesn’t burn.
Step 3
Add white wine and simmer until reduced by half.
Step 4
Add clams, cover, and steam until clams begin to open. Add butter and cook until most of the clams are open.
Step 5
Place clams in a bowl, top with parsley, pinch of red pepper flakes, if using. Serve the clams with crusty bread or pasta, if desired. Remove siphons before eating.

Note: I recommend a dry white wine like Pinot Grigio or Sauvignon Blanc to cook (and drink!) this recipe with.
