Smoked Salmon and Avocado Toast with Soft Scrambled Eggs

Sourdough toast is the perfect base for these easy soft scrambled eggs, creamy avocado, and silky smoked salmon for your next breakfast or brunch.

  • 2 eggs
  • splash of milk
  • butter, for cooking
  • salt and pepper, to taste
  • 1 avocado, sliced
  • 3-4 slices smoked salmon
  • 2 slices sourdough bread, toasted
  • fresh squeezed lemon juice, to taste


  • Step 1

    Whisk the eggs and milk together.

  • Step 2

    In a small pan on a low heat, add butter and melt. Once melted, add the eggs. Use a spatula or wooden spoon to gently move the egg around the pan until curdles form (but not cooked through).

  • Step 3

    Turn off the heat just before the eggs are ready (they should still be very soft and slightly liquid as they will continue to cook). Season with a pinch of salt and freshly ground black pepper.

  • Step 4

    Serve the scrambled eggs on toast with sliced avocado, smoked salmon and a big squeeze of lemon juice.
