ingredients
- 2 eggs
- splash of milk
- butter, for cooking
- salt and pepper, to taste
- 1 avocado, sliced
- 3-4 slices smoked salmon
- 2 slices sourdough bread, toasted
- fresh squeezed lemon juice, to taste
Method
Step 1
Whisk the eggs and milk together.
Step 2
In a small pan on a low heat, add butter and melt. Once melted, add the eggs. Use a spatula or wooden spoon to gently move the egg around the pan until curdles form (but not cooked through).
Step 3
Turn off the heat just before the eggs are ready (they should still be very soft and slightly liquid as they will continue to cook). Season with a pinch of salt and freshly ground black pepper.
Step 4
Serve the scrambled eggs on toast with sliced avocado, smoked salmon and a big squeeze of lemon juice.
