A creamy dip is one of the best ways to get a party started, and this one is absolutely bursting with flavor. If you find yourself with a little time on your hands, go ahead and try making the labne yourself. All you have to do is stir a little salt into plain yogurt, then strain it over a fine mesh strainer lined with cheesecloth for about 24 hours. Castelvetrano olives are tossed with lots of garlic, citrus zest, and chili flakes to punch up the flavor. You’ll stir some of the olive mixture into the labne to distribute the flavor, then arrange the rest on top before broiling, where the olives will wrinkle slightly and concentrate their flavor. It’s perfect served with crackers, sliced bread, or fresh veggies.

Substitutions: 

Store-bought labne or whole milk ricotta in place of the homemade labne
Gluten-free crackers or bread

Optional Add-Ons: 

Fresh chopped herbs such as dill, cilantro, or parsley

For the Homemade Labne

ingredients

  • 1 (32-ounce) container full-fat plain yogurt
  • Pinch sea salt, plus more for garnish

Method

  • Step 1

    Stir a pinch of salt into the yogurt and pour into a fine mesh strainer lined with a few layers of cheesecloth. Twist the ends together to encourage the straining, then transfer to the refrigerator for about 24 hours.

For the Olive Dip

ingredients

  • 10 ounces (about 1 3/4 cups) pitted Castelvetrano olives, roughly chopped
  • 2 small lemons or oranges, or a combination, zested and juiced
  • 4 small garlic cloves, finely grated
  • 1/2 teaspoon red chili flakes
  • Crackers, sliced bread, or fresh veggies, for serving

For the Olive Dip

  • Step 1

    Add olives, grated garlic, lemon or orange juice and zest, chili flakes, sea salt, and a generous drizzle of olive oil in a medium bowl and stir until well combined.

  • Step 2

    Transfer strained labne to a heat-proof serving dish.

  • Step 3

    Stir about ½ cup of the olive mixture into the labne. Top with the remaining olive mixture.

  • Step 4

    Broil until olives become wrinkled and golden, about 8-10 minutes.

  • Step 5

    Serve olive dip warm with crackers, sliced bread, or fresh veggies.
