Lunch

Ingredients:

makes two portions

1 cup green papaya

1 carrot

2 tbsp roasted peanuts

2 cloves of garlic

1 thai chili pepper

1 tbsp palm sugar

2 tbsp fish sauce

juice of a lime

pinch of salt

3/4 lb sardines

flour for frying

sunflower see oil for frying

Directions:

Grate the carrot and papaya, set aside.

In a mortar, combine the garlic, chili, sugar, fish sauce, lime juice and salt.

In a bowl mix together papaya, carrots and peanuts with dressing, set aside.

For the sardines, remove the gut and wash them. Coat in a layer of flour and fry in sunflower oil until well browned. 

Mix sardines into dressed salad and top with cilantro and more chili if desired. Enjoy!
