We absolutely love this flavorful parmesan broth. Use the broth to cook risotto, make soup, etc.
Makes 5 Cups
 
Ingredients:
 
10 cups of water
1 onion, peeled, halved, and charred slightly in a dry pan
1 head of garlic, top cut off to expose cloves
1 bunch thyme, fresh
3 bay leaves, fresh
5 parsley sprigs
4 stalks of celery, chopped
2 carrots, peeled and chopped
1 teaspoon black peppercorns
1 pound Parmesan rinds
 
Method:
Combine all ingredients in a large stock pot.  Cook on low heat for 2 hours until vegetables are tender and parmesan rinds have fallen apart.  Strain through a mesh strainer lined with cheesecloth and reserve. 
 
Broth can be used to cook risotto, make soups or cook vegetables.
