Recipe Intro From jennifermakes
RECIPE:
• 1 stick of celery
• 2 apples, peeled & cored
• 3 carrots
• 750ml hot stock (veg or chicken)
• handful of coriander
• 1 tsp of chopped garlic
• 1 tsp of grated ginger
• 1 tsp of turmeric
• 1 tsp of cumin
• 1/2 tsp of chilli flakes
• juice of 1/2 a lemon
Roughly chop the celery, carrots and apples. Add to a pan on medium heat, with the garlic, ginger and coriander. Cook the veg for 5 minutes and then add the hot stock and stir. Add the spices and leave to cook for 20-25 minutes until the veg is soft, squeeze in the lemon juice and remove from the heat. Blend until smooth and serve with warm bread
